Step 1- Shallow/pan fry 1 kg fish of your choice. |

Step 2- In a pan, add ½ tsp of mustard seeds, let it splutter, then add 1 tbsp chopped ginger and garlic each, 3 chopped onions and fry until golden brown. Now add 8-10 curry leaves, 2 chopped tomatoes. Cook till the tomatoes turn mushy. |

Step 3- Now add ½ tsp of red chilli powder (optional), ½ tsp of turmeric powder, 2-3 green cardamom (optional) and 1¾ of The Flavour Trail’s Fish Masala. Season with salt as per taste. |

Step 4- Add 2 tbsp tamarind pulp to the gravy and let it cook for 3 min. |

Step 5- Add fried fish pieces to the gravy to let it cook for another 10-12 min. |

Step 6- Garnish with fresh green coriander leaves and serve hot with steamed rice or roti. |
