Healthy cooking with lauki

The lockdown has turned everyone into a Michelin Starred Chef. A lot of us like to unwind in the kitchen with our chef hats on. Some of you may be trying exotic dishes while leaving the beloved ‘lauki ki sabzi’ behind. Fun fact: lauki is full of nutrition and less on calories. That makes it a great option for weight watchers, too.

But what about the boring taste? You can create appetising and healthy dishes with organic food products.

Things you need to try these 3 dishes: Garam Masala, Achari Masala and of course, Fresh lauki.

Lauki Keema

Sounds odd? Well, we are sure you won’t miss your meat preparations when you try this one. It’s an easy one and takes less than 20 minutes to prepare.

Ingredients:

  • Lauki 250 gms (grated)
  • Garam Masala 1 tsp
  • Onion 1 (diced)
  • Ginger paste (1/2 tsp)
  • Garlic Paste (1/2 tsp)
  • Salt to taste
  • Cumin or jeera (1/2 tsp)
  • Red chili powder
  • Turmeric powder
  • Oil

Instructions:

  1. Par boil the grated lauki and keep aside.
  2. In a pan, add oil and stir-fry diced onions with cumin, ginger and garlic paste.
  3. To this, add salt, red chili powder and turmeric powder and sauté well.
  4. Add the par boiled lauki and stir again.
  5. Add garam masala and cook for 3-4 minutes.
  6. Garnish with squeezed lemon and coriander leaves (optional).
  7. Lastly, enjoy with roti or multi-grain bread
Healthy Achari Lauki Tikki

Do away with the regular old-school deep-fried aloo cutlets and give this one a shot. Same taste, minus the calories. This one makes a great tea accompaniment or a lunch/dinner starter.

Ingredients

  • Lauki 450 gms (grated)
  • Achari Masala 1 tsp
  • Onion 1 (finely chopped)
  • Coriander powder (1/2 tsp)
  • Salt to taste
  • Red chili powder
  • Turmeric powder
  • Corn flour
  • Bread crumbs 1 ½ cup
  • Oil

Instructions:

  1. Grate the lauki in a large mixing bowl and squeeze out any water.
  2. Add all the ingredients except oil and breadcrumbs.
  3. Drizzle some oil on your palms and mix the ingredients well.
  4. Now make small, round flat cutlets/tikkis out of the mixture and keep aside.
  5. In a shallow pan, add three tablespoon oil (on medium heat).
  6. Coat the tikkis with breadcrumbs and shallow fry on the pan till they turn golden brown.
  7. You can sprinkle some chaat masala (optional).
Street Style Peri Peri Frankie (with lauki)

Wondering if you can turn your all-time favorite mumbai snack ‘frankie’ into a healthy one? Yes, that too with lauki and the magic of organic masala.

Ingredients

  • Lauki 100 gms (diced)
  • Onions diced and thinly sliced 2
  • Green peas or matar 3 tbsp
  • Carrot 1 (diced)
  • Salt
  • Black pepper powder 1/2 tsp
  • Turmeric powder ¼ tsp
  • Chaat Masala (optional)
  • Rotis / Tortilla wraps 4

Instructions:

  1. In a kadhaai, add some oil and fry the onions.
  2. Once the onions turn golden-brown, add the peas, lauki, carrot and continue stirring.
  3. Add salt, black pepper, peri peri masala and cook on low flame for 15 minutes.
  4. On a pan, cook the roti/tortilla on both sides.
  5. Now, place the lauki sabzi on the roti, sprinkle some chaat masala and garnish with thinly sliced onions.
